Quick Holiday Treat Recipe: Muddy Buckies

I’ve been on a baking frenzy this season. Cabin Girl and I attempted to calculate it and figured I made around 1,000 servings of treats; cookies, breads, bars, and fudge.

I remembered a few years ago that I’d tried my hand at making Buckeyes. You know, little balls of peanut butter smothered in chocolate? Amaze-balls. *snicker*

Thinking of peanut butter and chocolately goodness made me think of Muddy Buddies. You know, Chex cereal smothered in chocolate, peanut butter, and powdered sugar. Mmmmm.

Then BAM.

OMG.

What if I COMBINED THEM?!

And so a star of a treat was born.

You’ll need:

9 cups Corn Chex™, Rice Chex™, Wheat Chex™ or Chocolate Chex™ cereal (or combination)
4 cups semisweet **chocolate chips, divided
1 cup **peanut butter, divided
1/4 cup **butter or margarine
1 teaspoon vanilla
2 1/2 cups powdered sugar, divided, plus sugar for dusting
2-3 tablespoons coconut oil

Melt 1 cup of chocolate chips in a microwave safe bowl for 1 minute with 1/2 cup peanut butter and 1/4 cup butter. Stir, heat another 30 seconds, or until it stirs smooth. Mix in 1 tsp vanilla.

At the same time:

Blend 1/2 cup peanut butter with 1 cup powdered sugar
Blend 1/2 cup peanut butter with 1 cup powdered sugar.

Alternate pouring cereal, remaining 1 1/2 cups powdered sugar, and chocolate mix into mixer, while it’s running. Mix until everything is coated.

Form a palm sized amount of mix into a ball. It might be crumbly; just keep squeezing and squishing until it keeps its shape.

Give the balls a roll in powdered sugar.

Now, melt the other 3 cups of chocolate chips in a microwave safe bowl with coconut oil (you can use butter, but the oil makes it turn out smoother) for 1 minute, stir, and heat again for 30 seconds, until it stirs smooth.

Place them on wax paper and freeze them for about an hour.

One batch yields about 5 dozen Muddy Buckies!

**These can easily be altered to be allergy friendly. Use Sunbutter, dairy free chocolate chips, and your favorite butter alternative for a nut free, dairy free, gluten free treat!**
